It is the trendy middle classes with the time,
angst and intellect to label their gripes as food allergies.  

I like this one, it breaks Nick Taylor's rule:

Nearly all (but not everyone) of us just deal with it.  After all what
happened to those with wheat/milk/nut allergies thirty years ago?

Why do you still think in terms of class?

It's also possible that these allergies are something that's become more
developed in the last 30 years.

Whats the point of that?

Marketing, a reference to something already well known to tempt the health
conscious dairy eater as well as the non-dairy eater who would like
something to put in their sandwich.
